Last year I canned a lot of tomatoes, but I also put some in bags and froze them. When you thaw them, the skins slide right off and a lot of the water comes out of them. Makes them easier to process. I also have one of those mills to separate the seeds and skins.

I just realized why squirrels destroy tomatoes. They think they're walnuts and demolish the tomato. As soon as they realize there's no nut inside they just leave the resultant mess.

I love fresh tomatoes so much I wait for the green ones to ripen. These are ones that fell off before they were ripe.

Not a lot of seeds and delicious goo in these, just chopped and dried. Rehydrate and use in pasta on pizza, soups it’s summer flavour the rest of the year.

Learned a new trick this year for making tomato sauce. A cheese grater can reduce the tomato’s to juice leaving the skin behind quick and easily.
